This Pomegranate French 75 is the perfect celebration cocktail. Make a pomegranate simple syrup, then shake it up with gin and top with champagne!

Ingredients

For the pomegranate simple syrup:

  • 1/2 cup pomegranate juice
  • 1/2 cup granulated sugar

For the pomegranate French 75:

  • 2 ounces gin
  • 1 ounce fresh lemon juice
  • 1 ounce pomegranate simple syrup
  • 6 ounces champagne or Prosecco
  • Pomegranate seeds, for garnish, optional

Instructions

  1. Make the pomegranate simple syrup: In a small saucepan over medium heat, stir together the pomegranate juice and sugar for about 5 minutes, or until the sugar is completely dissolved. Set aside to cool, then transfer to an airtight container and place in the refrigerator to cool completely.
  2. Make the cocktails: Fill a cocktail shaker with ice. Add the gin, lemon juice and pomegranate simple syrup. Shake for 30 seconds, or until the cocktail shaker is frosty. Strain into glasses and top with champagne. Garnish with pomegranate seeds if desired.
