For the spiced simple syrup:
- 1 cinnamon stick
- 1 star anise
- 2 whole cloves
- 1 (2-inch) knob ginger, sliced
- 1 cup water
- ¾ cup sugar
For the mocktail:
- 1 ½ ounces pineapple juice
- 1 ounce fresh lime juice
- ½ ounce spiced simple syrup (recipe below)
- 2–3 ounce ginger beer
- Ice (a lot)
Instructions
- To make the simple syrup, combine the cinnamon stick, star anise, cloves, ginger and water in a small saucepan. Bring to a simmer over medium heat and let simmer for about 10 minutes. Scoop out the solids and stir in the sugar. Simmer, stirring, for about 5 minutes, or until the sugar is completely dissolved. Remove from heat and let cool slightly before transferring to an airtight container and chilling in the fridge.
- To make the mocktail, fill a cocktail shaker or mason jar with ice. Add the pineapple juice, lime juice and simple syrup. Shake for 30–60 seconds or until the shaker is frosty and chilled. Strain into a rocks glass filled with fresh ice. Top with ginger beer and enjoy!
