These Healthier Peanut Butter Chocolate Chip Blondies are chewy, moist, delicious, and full of peanut butter flavor with no refined sugar!

Ingredients

  • 1/2 cup creamy natural peanut butter
  • 3/4 cup maple syrup or honey
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat pastry flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F. Line an 8″x8″ baking dish with parchment paper and set aside.
  2. Whisk together wet ingredients: In a medium bowl, whisk together the peanut butter, maple syrup, egg, melted butter, and vanilla extract.
  3. Add the dry ingredients: To the wet ingredients, add the flour, baking soda, and salt. Fold in gently with a spatula, then fold in the chocolate chips.
  4. Bake: Pour the batter into the lined baking dish and spread to level the top. Sprinkle the top with more chocolate chips, if desired. Bake for 29-34 minutes, or until a toothpick comes out clean. Allow to cool completely before slicing into bars.
