    Healthier Peanut Butter Chocolate Chip Blondies

    These Healthier Peanut Butter Chocolate Chip Blondies are chewy, moist, delicious, and full of peanut butter flavor with no refined sugar!

    It’s not often that I yell about a recipe, but here goes: YOU NEED TO MAKE THESE BLONDIES. RUN! DON’T WALK. THEY ARE THAT GOOD. I made these just this week, and not to toot my own horn, but they were perfect on the first try. So perfect I literally jumped up and down in my kitchen. Yeah. I was yelling for a reason.

    I can’t even pick my favorite part. They’re the perfect balance between chewy and cakey, and jam-packed full of peanut butter chocolate flava. Plus they’re healthier than your standard blondie or brownie, which isn’t always necessary but doesn’t hurt when you’re trying to have your cake and eat it too as often as possible.

    Health factor aside, though, THEY STILL TASTE AMAZING. Like, the level of amazing typically reserved for desserts with two sticks of butter and a full cup of granulated sugar. You will not believe that these are passably healthy(ish). Or that the batter comes together in one bowl and ten minutes.

    Seriously, these are a miracle. Are you sold yet?

    What makes these blondies healthier?

    That depends on your definition of healthier, I suppose. For starters, they’re naturally sweetened. I made mine with maple syrup, but I’d imagine you’d see similar success with honey, too.

    They’re also whole wheat, which gives them an additional nutty flavor that jives really well with the peanut butter. I typically use whole wheat pastry flour for desserts, because it’s much lighter than regular whole wheat flour and yields a lighter, moister crumb. Regular all-purpose flour would also work here if it’s all you’ve got.

    Finally, they contain a mere two tablespoons of butter, which is far, far less than the usual full stick. Believe it or not, they’re still incredibly moist, because peanut butter has a fairly high fat content on its own. So you get a) tons of delicious peanutty flavor, and b) a healthier fat source. Win-win.

    No matter how much butter is or isn’t in these, though, we’re still not skimping on the chocolate chips. There is no room here for dry, flavorless desserts, no sir. Tons of melty chocolate baked into warm, soft, incredibly peanutty bars? Uh, yeah. Sign me right up.

    Ingredients

    Units Scale
    • ½ cup creamy natural peanut butter
    • ¾ cup maple syrup or honey
    • 1 large egg
    • 2 tablespoons melted butter
    • 1 teaspoon vanilla extract
    • ½ cup whole wheat pastry flour
    • ½ teaspoon baking soda
    • ¼ teaspoon kosher salt
    • 1 cup dark chocolate chips

    Instructions

    1. Preheat the oven to 350°F. Line an 8″x8″ baking dish with parchment paper and set aside.
    2. Whisk together wet ingredients: In a medium bowl, whisk together the peanut butter, maple syrup, egg, melted butter, and vanilla extract.
    3. Add the dry ingredients: To the wet ingredients, add the flour, baking soda, and salt. Fold in gently with a spatula, then fold in the chocolate chips.
    4. Bake: Pour the batter into the lined baking dish and spread to level the top. Sprinkle the top with more chocolate chips, if desired. Bake for 29-34 minutes, or until a toothpick comes out clean. Allow to cool completely before slicing into bars.
