Flaky All-Butter Pie Crust

This is the only pie crust recipe you’ll ever need. Somewhere between a pie crust and a rough puff pastry, it’s perfectly crisp, flaky and buttery. This recipe is adapted from Smitten Kitchen’s Extra-Flaky Pie Crust, which is adapted from Stella Park’s pie crust technique from BraveTart — truly, there are only so many pie crust recipes in this world. 

Ingredients

  • 2 cups all-purpose flour, plus more for dusting
  • 2 teaspoons granulated sugar
  • 3/4 teaspoon kosher salt
  • 1 cup (2 sticks) very cold unsalted butter, cut into 1/4-inch cubes
  • 1/2 cup ice water
  • Turbinado sugar, for sprinkling, optional

Instructions

  1. Make the pie dough: In a large bowl, whisk together the flour, sugar and salt. Add the cubed butter and toss to coat all the butter cubes in flour. Using your hands, begin working the butter into the flour, pressing down on the cubes to create flat, shaggy pieces. Continue until no very large butter pieces remain. Gradually mix in ice water with a wooden spoon or rubber spatula until the dough comes together. It will feel a little wet. Cut the dough into two equal-sized pieces, then form each into a ball and press down to create a disc. Wrap each disc in plastic or parchment, then place in the fridge to chill while you make the filling.
  2. Make your pie filling of choice according to recipe directions while the dough chills.
  3. Roll out the dough: Remove the pie dough from the fridge and place on a well-floured surface. Sprinkle the top of the dough with flour and roll it out into a disc that’s about ⅛-inch thick. Transfer to a 9-inch pie dish. To do this, I like to fold the rolled-out dough in half, then in half again. Brush off excess flour and gently place the dough in the dish, unfolding it and pressing it gently into the bottom. Roll out top crust using the same steps.
