- 1 tablespoon extra-virgin olive oil
- 12 ounces Italian chicken sausage, sliced
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning*
- ½ teaspoon crushed red pepper flakes
- 1 (17.5-ounce) package gnocchi
- ½ cup white wine or chicken stock
- 1 (15-ounce) can tomato sauce
- ¼ cup heavy cream
- ½ cup grated Parmesan cheese, plus more for topping
- Several big handfuls fresh baby spinach
- Kosher salt and black pepper
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sausage in a single layer and cook for 2-3 minutes on each side, until lightly browned.
- Add the garlic, Italian seasoning and red pepper flakes, and cook, stirring, for an additional 30 seconds or until fragrant.
- Add the gnocchi, white wine or chicken stock, and tomato sauce, and stir to coat. Bring to a simmer, cover, and reduce heat to medium-low. Cook, removing the lid to stir occasionally, for 5-7 minutes, or until gnocchi is cooked through and fork-tender.
- Stir in the heavy cream, then turn off the heat and stir in the Parmesan cheese until melted. Stir in the spinach and adjust seasonings to taste. Serve topped with more cheese if desired.
Notes
- In place of Italian seasoning, you can also use 1 teaspoon of dried basil, 1 teaspoon of dried oregano, and ½ teaspoon of dried thyme.
