Cheesy Bacon Spinach Dip

If you like spinach dip, you’re going to love this version studded with bacon and lots of melty cheese. It’s the perfect crowd-pleasing appetizer for any party!

Ingredients

  • 8 slices bacon
  • 1 (8-ounce) block cream cheese, softened to room temperature
  • 1 cup sour cream
  • 1 1/2 cups shredded cheese (I used a combination of cheddar, Gruyère and Parmesan)
  • 10 ounces frozen chopped spinach, thawed and squeezed to remove all the water
  • 1/2 cup chopped chives
  • 2 cloves garlic, minced
  • Kosher salt and black pepper
  • Crackers, vegetables or baguette slices, for serving

Instructions

  1. Preheat the oven to 375°F. Spray a 2-cup baking dish with nonstick cooking spray and set aside.
  2. Cook the bacon in a large skillet over medium heat until crispy and golden-brown. Remove to a plate lined with paper towel to drain. Crumble into small pieces and set aside.
  3. In a medium bowl, whisk the softened cream cheese until smooth. Add the sour cream, 1 1/4 cup shredded cheese, thoroughly drained spinach, crumbled bacon, chives and garlic. Season with salt and pepper and stir to combine.
  4. Transfer the mixture to the greased baking dish and top with the remaining 1/4 cup cheese. Bake for 20 minutes, or until the cheese is bubbly and melted.
  5. Serve hot with crackers, veggies and/or baguette slices for dipping.
