    Apple Cinnamon Baked Oatmeal

    Make this naturally sweetened, perfectly spiced Apple Cinnamon Baked Oatmeal once and enjoy a delicious, cozy breakfast all week long!

    I eat oatmeal for breakfast at least four days a week. It’s simple, it’s cheap, and I always have it. Usually it does the trick, but microwaved oatmeal just doesn’t really do it for me sometimes. So when I’m still craving a sweet, cozy breakfast but can’t bear to look at my microwave, I opt for something like this apple cinnamon baked oatmeal instead.

    I’m always on the lookout for sweet breakfasts that aren’t completely devoid of nutritional value, and this baked oatmeal is IT. It’s naturally sweetened, and it takes just a few basic ingredients to put together. I almost always have every ingredient to make this in my cabinet, and you probably do too.

    You can easily remove the nuts or swap them out for a nut of your choice. Pecans would also be great here, as would sliced almonds. You can make it vegan by using plant milk and a vegan egg replacer, like flax eggs or chia eggs. And you could even switch out the fruit, depending on what you have — I’ve had great success with pears, frozen berries, or even peaches.

    Truly, the hardest part of this recipe is exercising patience for 45 minutes while it bakes. Make it on a Sunday to enjoy throughout the week, or wake up an hour before your family to surprise them with brunch on the weekend.

    Ingredients

    Units Scale
    • 2 cups rolled oats
    • ⅔ cup chopped walnuts
    • 2 teaspoons ground cinnamon
    • 1 teaspoon baking powder
    • ½ teaspoon kosher salt
    • ¼ teaspoon ground nutmeg
    • 2 cups milk of choice (I used vanilla almond milk)
    • ⅓ cup maple syrup or honey
    • 2 large eggs
    • ¼ cup melted unsalted butter or coconut oil
    • 1 teaspoon vanilla extract
    • 2 large apples, peeled, cored, and chopped into ½-inch pieces (I prefer Fuji apples)
    • Additional maple syrup for serving, optional

    Instructions

    1. Preheat oven to 350° F. Grease a 9-inch square or 2-quart baking dish and set aside.
    2. In a medium mixing bowl, whisk together oats, walnuts, cinnamon, baking powder, salt, and nutmeg.
    3. In a smaller mixing bowl, whisk together milk, maple syrup, eggs, butter or coconut oil, and vanilla until well blended. Pour the liquid mixture into the dry mixture and stir to combine.
    4. Arrange half the chopped apples evenly over the bottom of the baking dish, then pour the oat mixture over the apples. Scatter the remaining apples over the top.
    5. Bake for 42 to 45 minutes, or until the top is golden and the center is set. Let the oatmeal cool for a few minutes before scooping into bowls and serving with a drizzle of maple syrup.
